Sodium copper chlorophyllin is an edible natural pigment. It is obtained by replacing magnesium ions in plant chlorophyll with copper ions. It is a dark green powder with a metallic luster. It is extracted from silkworm feces and is odorless or slightly odorous. It is easily soluble in water and insoluble in oil. The aqueous solution is blue-green, transparent, and has no precipitation. Acidic precipitation will occur. It is slightly soluble in ethanol. It has stronger light resistance than chlorophyll and decomposes when heated above 110°C. It can be used for coloring cakes, and the limit dosage is 1g/kg.

Sodium copper chlorophyllin can be used in more than a dozen food categories in my country, including frozen drinks, canned vegetables, candies, baked goods, fruit and vegetable juice drinks, jellies, etc. There is no limit on the amount in fruit and vegetable juice drinks, and the maximum amount in other categories is 0.5g/kg
