Ergothioneine is a natural amino acid that comes from plants and can accumulate in animals. Ergothioneine is a natural antioxidant that protects human cells and is an important active substance in the body.
Ergothioneine is mainly found in mushrooms, but it is also found in king crabs, meat of animals that feed on grasses containing ergothioneine, and other foods.
The pure product is white crystal, water-soluble, (soluble 0.9mol/L at room temperature), and does not oxidize itself at physiological pH and in strong alkali solutions.
